Today on Business Insider, there was an article on 7 surprising facts about quinoa. See it here: http://www.businessinsider.sg/quinoa-cooking-price-history-2014-4/#.U05AhF79_0s As a HUGE fan of this superfood, I of course had to see what BI had to say about it. It’s a fun little video they did and worth a look, especially if you are not too familiar with the grain (actually a seed). While Quinoa’s insane recent popularity does pose a threat to future availability, I’m going to enjoy it and all of it’s amazing health/nutrition benefits while it’s still on the grocery shelves.
At the moment I’m having major quinoa cravings. I don’t know if it’s because I upped my running miles, but I definitely can’t seem to get enough. My favorite way to prepare it is to steam it like rice, then mix it with chopped steamed broccoli, pour in some pumpkin seeds, feta cheese and drizzle extra virgin olive oil all over and add a dash of salt and pepper to taste. mmmmmm so yummy and sooooo satisfying after a 17km run in the Singapore heat.
