20 Min Healthy Homemade Raw Coconut-Cacao Snacks


In an effort to keep up with my eating clean and healthy plan, I made some raw snacks this weekend.  No sugar added, no gluten, no dairy, no eggs.  Just a mix of organic goodies: Almond powder, raw cacao powder, cashews, dried coconut shavings, coconut oil and a few drops of vanilla flavored stevia.

I mixed it all up  in no particular amounts in my food processor (I won’t lie, I am no chef!), added a bit of water, and then rolled the mix into little balls and then coated them with a little bit more of the almond powder.  After all of the balls were prepared, I put them in the fridge for a few hours to let the coconut oil harden and then they were ready to be enjoyed!  As this was my first batch, I have a couple of things I would do differently next time.  I will either use a bit of agave or mix in some dates rather than use stevia.  I tried to avoid using agave or dates to keep the mixture as low in sugar as possible, but I find the stevia to be a bit too bitter.  The finished product is still pretty yummy and a very satisfying snack especially if eaten with a glass of almond milk, but I think with a little bit more sweetness, they would be perfect!
